We took our Ivory Coast beans and made a Sugar Free bar using Erythritol and Monk Fruit! At 70%, it is slightly less sweet than our 75% dark due to the properties of the Erythritol. The chocolate gives a cooling sensation through the mouth similar to a menthol or mint. This treat is great for diabetics as it won't cause blood sugar spikes and for those on a keto diet with about 5 net carbs for the entire bar! Unlike other sugar alcohols, erythritol won't cause havoc in your digestive system either.
